stroker Cranks size & weight

apart from the size in volume. do the 87mm stoker cams actually make a big difference in torque & ppower.
do they make the engine rev more efficiently?

or if I Stayed with a 85mm but the Crank shaft is 1kg lighter. will that make the engine rev a lot better?
