It still seems that the raison d'être for an MX-5 is a roof that goes down and being a sports car not just a GT like say a Mustang. Pity that Mazda has mucked it up with the ND - a really flawed range- bring back a proper top like the NC retractable version.

The question asked, why is an NC auto better than a Toyota 86? I can't speak for the auto, but I sold my 86 after 3 yrs of ownership. Had one of the first batch delivered in 2012. It is a truly great car, handles well, a lot of fun above 3K RPM, and is moderately practical. Sure it is built to a price with cheap plastics and shares a lot with Camrys and Hilux, but that isn't the issue. It lacks soul
I sold it and bought an NC2 manual. My wife and I absolutely love it and we are possibly a bit biased as it's the 3rd MX5 we have now owned.
The MX5 is a sportscar through and through and yes, you can put the roof down in an MX5, the 86 can't top that.
To the OP, congrats on your purchase and it's great to see that being a car enthusiast has no age restriction. Now let me to and tell my wife that!

Many people view the NC as the least worthy MX-5 but don't be fooled by the naysayers: the NC is as near as damn it to the NA/NB in size and driving experience as you could imagine, but with a more comfortable cabin, larger wheels and bulging wheel arches. Oh, and it has more standard power from a bigger, more modern engine.
I've owned an NA and an NB and was surprised how familiar the NC was to me. Haven't dríven the ND yet but I suspect Mazda has done a good job preserving the badge.
Wheel arches and standard larger wheels deceive the casual observer into thinking that the NC is bigger than it actually is. The only way the NC departs from the NA/NB experience is in fit, finish and a (much) better soft top. The only I think I miss from my old MX-5s is the original Momo steering wheel from my NA.
Bonus with the hard top is that you'll be able to actually hear the audio system.

Oh, and don't be put off the the performance driving and mod crowd. Driving stories and mods are not unlike fishing stories. Better in the re-telling. Anyone can push their car but most people would poo their pants if they actually drove on the limit of the car, more akin to driving on sticky ice than anything else with the car dancing around corners and feeling alive at the wheel.

If you had access to a car like this, would you take it back right away? Neither would I.

Yes I'll vouch for that, as the owner of a supercharged and heavily modified NA8 I can certainly say that a fairly stock NC can be quite difficult to get past. I find I really have to work at it. So much so I've sometimes thought about getting one of them and getting rid of the NA8. But the NA8 would still need a good home.
