I run 15x8 +20 or 25 (not 100% sure) with 225/45 NT01s on my SE and have just a flat roll at the rear, no roll at the front, I get some minor rubbing on fender liners at full bump at the front but nothing I'm worried about. I will buy 205/50s for my next set of tyres because they are significantly cheaper than 225s generally.
If you're not tracking the car, or if you're ok with not getting every last 0.1%, then 15x8s and 205s are cheaper and give you a lot more tyre options. If you want to go fastest at all costs then 15x9s and 225/50 A050s.
Looking to set my car up for some weekend track work. The 15" wheels and tyres will more than likely just be for the track, so I think I'll go with the 8" rims and the 225/45 RS3 or NT01 tyres for now. In the long run this will give me more options with the tyres as mentioned.
