Some MX5 engines are easy to fill and some are really cantankerous. It's just the luck of he draw. If someone is having trouble getting the air out it's not necessarily because they're doing anything wrong. So those who think it's easy should just be thankful that they've got a cooperative one.
Mine used to have to be topped up a dozen times over 3 or 4 weeks before it was finally free of air. Total PITA. As part of a minor rebuild I changed the head gasket, ground smooth all of the water ports between head and block and put in a coolant re-route and then it just pretty much bled itself first time.
