Full roll cages are generally made to order, the builder will usually supply parts and make it per whatever regulations you need to meet (CAMS etc)

There are bolt in cages made by companies like Cusco, but they may not neet Aussie standards for racing.

Seats etc are available from the usual race gear places, GMP Racing, Racer Industries, Meridian Motorsport, etc, etc.

Most of the wear and tear items (brakes/pads/fluids) are easily available from Supercheap/Bursons/Autobarn

You can't have a full cage in a road car under the NCOP. If you still want it to be road registered you need to find one with a mod plate prior to the new legislation. Iirc, there is an nb8b on my105 with a cage that was done for targa events. Might be worth looking into.

Nothing over 4 point roll cages can be modplated in qld as of the latest NCOP. 4 point and minimum 50mm thickness.

Already mostly covered, but I replied to your other thread, here it is again:

Side bars are not the biggest factor in legality here. As of the adoption of the NCOP last year, full cages can't be mod plated. If it has bars in front of the driver's seat, it's not legal. You can't possibly get a full cage in QLD and have it road legal, unless the plate was issued before the NCOP came in. I'm not an engineer or anything though, I could be mistaken, but this was what I was told by various different workshops before they came in.

Besides which, if safety is your biggest concern, a cage isn't necessarily a great idea for a road car. Having solid bars within reach of your head in an accident is more likely to kill you in most crashes, than you are to actually be in a rollover crash on the road. Roll cages are made to protect the driver cell, and the padding you get for them is designed to allow for a helmet to hit it, not your head. Opinions vary on the issue, but having a full cage in a road car, especially one with a very small driver cell, seems like a bad idea to me. In a track car, go nuts, great idea.
