Have rung around a couple tyre shops and none of them want to put 195s around an 8" wide rim.

Seeing as a 215 is the smallest recommended by most manufacturers you can't really blame them can you?

Get on it. Have had 195/50's on plenty of 8" rims. Also have never had a shop even question my intentions when asking what tires I wanted. I regularly drive the car hard also and have never had a problem on mine nor any of the other cars we have fitted them too. Even run Achilles 123 semis in a 195 and had no issues. The stretch is at an absolute minimum.

I see so many people saying this is dangerous blah blah blah but how many of those people have ever actually used one like that.....

I have.

It's sh*t.

You end up with a stupidly rigid sidewall and less grip than the same tyre on a proper rim.
Then, I'm not even a fan of 195s on a 7 inch rim.

radials are usually at their best (grip wise) when the wide of the carcass matches the width of the wheel

195 yokohama s drives have a section width of 7.8", potenza re-11s are 7.9". 8" wide wheels may be a touch too wide but its nothing to write home about. 195's are usually fastest on 7.5s.

I'm running 195 Achilles 123's on a 15x8, minimal stretch, cops a flogging and feels fine through corners, haven't had an issue
