Do these cars have a cold start sensor? If so it could be faulty and jamming 'thinking' you are trying to start the car from cold each time. These thing act as a sort of choke and richen the mixture a bit when starting from cold I believe but I am not sure whether the MX5's have them.
If you then try and start it when hot and it mistakenly alters fuel mixture obviously there would be problems.

Just a thought....someone here would know.

Yes they have a coolant temperature sensor.
