I've decided to purchase a workshop manual for the MX5. Theres quite a few manuals out there including manuals by Haynes, Keith Tanner. Any recommendations/thoughts appreciated.

Re: recommended workshop manuals
Apart from the Mazda workshop manuals, this is best:
http://www.amazon.com/Mazda-MX-5-Miata- ... pd_sim_b_5
& this is ok:
http://www.amazon.com/Mazda-MX5-Miata-1 ... IATA+BOOKS
But if you've got an SE, then they aren't going to cover everything.
The three Tanner books are good, but not workshop manuals. There's also Norm Garrett's Miata performance book which is also good, but again not a workshop manual.

Re: recommended workshop manuals
Does the book by Rod Grainger about the 1.8 model apply to NBs as well? The reason I ask is sometimes when I see this book listed for sale online, it specifically says it only covers models 1994 - 98 but not the 1999 or the Mk2 model.

It's only partially applicable to the NB - here's the NA-NB compatibility table to give you an idea of applicability:
