OK, update! The car runs!
Big thanks to 1red5 for coming over for a few hours and challenging what i "knew".
I plugged everything back in and could occasionally get a stumble, though aerostart didn't help much.
This challenged the idea of lack of spark, so after not smelling an increasing amount of petrol from cranking, we pulled the plugs. DRY! even after test firing the injectors and lots of cranking.
Put a good squirt of aerostart directly into 2 cylinders through the spark plug hole and it almost fired and ran. So fuel was now the suspect. Check the pump was functioning ect. All good.
Put the Mazda speed ecu back and after a few cranks it fired! WTF? it didn't do that last time.
Chuck the Adaptronic in, car doesn't start. Tried a uninstall / reinstall of the PC software, reloading maps and updating firmware, still the same so there must be a setting somewhere that i'm not seeing that is carrying though and isn't firing the injectors (we think).
I can only assume the plugs were wet last time from it running rich before it stopped. and the fuel smell was from the same??
I got an email from Andy this afternoon just after we got it running with checks for the ignition system so will run though everything to double check timing ect is correct then start looking at Injection.
All very odd as the car had fired first turn when i first installed the Adaptronic!
To anyone reading this and worrying about the ECU, i'm sure its a setting I've inadvertently changed and Andy (adaptronic) has been very helpful at trouble shooting.
Will keep everyone updated and copy across to the garage thread as well.

Did some more playing this afternoon / evening and got the car running on the Adaptronic.
Seemed to be a TPS based issues as it was the same symptoms as before but as soon as i cracked the throttle on a stock tune, it fired.
Now the stock map and setup, cracking the throttle is instant WOT.
Re calibrated the TPS settings so it reads 0% at closed and 100% at open, would now only fire (but fire well) at Full throttle.
Played some more with the TPS, brought the calibrated WOT point back to about 3/4. Won't fire before then, but fires up after that point.
So not sure what happening as WOT should reduce fuel, not increase. Quite likely it was all tied back to this, and possibly fouled plugs?
Took the car for a quick local spin. The closed loop idle is taking a while to compensate, especially after hot starts. So some heel and toeing is needed.
Power / Torque is reasonable, already noticed an improvement over the MS on low down torque. Looking forward to getting it dynoed properly.
oh..... and it sounds like i'm shooting people with a big riffle on overrun. Needless to say....tuning stopped reasonably early into the night.
