Twisties in the hunter valley region?
Bylong Valley Way between Sandy Hollow and Rylestone is an excellent drive. It is now completely sealed, as of a couple months ago and features lots of fast flowing bends and a couple of steep mountain passes. Highly recommended.
There's also Putty Road closer to the Hunter, and to the north the roads around Dungog are fun to drive too.

I like the road from Wollombi to Broke, there's a few hundred metres of dirt and its rough and very narrow but that all adds to the fun. Unfortunately it's in the middle of no where so it's a bit of a drive to get there.
Unfortunately the safety Nazi's have attacked most of the Hunter and dropped the speed limit to 80kmh everywhere. There used to be a few roads that were fun at around 100kmh but are now quite boring at 80kmh. One of them was the road from Wollombi back towards Sydney. It's quite tedious at 80kmh but was fun at 100ish.

Hey MXHEVN,
Nelson Bay is my home town. My folks still lives there so I frequent it regularly. I might catch up with you when you move there.
As far as good driving roads, there's also Thunderbolts Way from Gloucester - One of my favourite roads. And if you want to make it a good long day drive, you can combine Thunderbolts Way to Walcha, the right on Oxley Hwy towards Wauchope/Port Macquarie, then back down to Nelson Bay.
If you want to add more, you can turn right onto Bucketts Way at Taree, back to Gloucester, then Left (again at Bucketts Way) towards back to Pacific Hwy on your back to Nelson Bay.

And if you are coming back from doing the Buckets Way and Oxley Hwy like Hammer suggested, take the turn off onto Wootton Way (aka the Pacific Hwy before the bypass) that goes through the Bulahdelah State Forest and some very nice twisties, then comes back onto the main Hwy at Bulahdelah, linky. It has been a while since I have done it, but from memory, the road surface in some spots was pretty poor, but there is hardly any traffic on it because they all use the new freeway section that bypasses it.
