According to this website, the stock tyres (205/45 x 17) should fit on those rims OK.
I'm not sure about the best offset - probably 45. Fact:16x6.5 factory mags for the NC are 55 offset.
These are 5 stud wheels you are looking at

You need the 45 offset. Standard its 55 so the close to 55 the better.
You can reuse your 205 tyre but it will be stretched. I temporarily had some 205 V710s on my 8” racing rims and the rim stuck way out past the side wall of the tyre. Sorry the photo is small but you can see how far the rim sticks out.
I don’t think I’d run around on the road with a 205 on an 8” rim for too long.
I’ve went through this exercise last week, trying to decide what’s next when the crappy T1-Rs I have wear out.
I’ve found that there isn’t a lot of 225x40 or 45 tyres around. Federal have some. Yokie also or if you really want to spend some money the Michelin Pilot Sport 235x40x17 will only set you back $499 each!!! Choke, choke.
I also found that there isn’t a lot of 17x8” rims on the market either. The ones that are there are either made for Commodore’s and Camry’s and subsequently are quite heavy or the light weight racing rims that are hideously expensive.
So I may just end up with some 7” rims and run a set of 215x45s Michelin PP2’s.

Best offset advice you can follow.

Does this mean you will be parting with the RX7 rims? If so.... you know who to call

The RX-7 rims are my track rims. When I'm done & dusted racing round I'll be selling them with the tyres on this site so you won't miss out seeing them go up for sale.
I wanted to punt the car around as many tracks as possible before I got too old and then maybe regretted not doing it when I could.
Now with CAMS rule changes I have been able to do Eastern Creek and Oran Park GP. Many (many) years ago I did OP north and south but never the GP. After driving OPGP you realise how far track design with safety run off areas have advanced.
Those tracks together with QLD Raceway at Natmeet 06 and Phillip Island now only leaves one iconic track to race at and that’s Bathurst.
Sadly I don’t think that will happen as I just can’t afford having some goon in a FOSC regularity event sticking his car through the side of the NC. So I’ll just have to be happy to drive around it with all the other people at 60kph.
So the sale of the rims might not be that far off. I just need to convince myself that I need to grow up.

Phil stop talking crap!! Brother Joe is 72 this year and I see him neither growing up nor hanging up his helmet any time soon.

We did regularity last Easter and there were some tense moments.... That said I hope next years event will be better organised with more focus on matching cars of similar times. If you ever get a chance to drive on this track do it... Its something you will always remember!!!
Mate your out there having heaps of fun and driving very well. If you do decide to retire your car, we'll always have a NC for you to punt round even if I have to drag you to it kicking and screaming
