So I ordered some of those plastic/rubber gear boot replacement bits from MX5parts in the UK, and will do a bit of a DIY jobby on them. There's a guide on miata.net on how to replace them, so that shouldn't be too difficult.
What I wanted to ask was whether or not changing these gear boots will require me to replace / top up the gearbox oil as well? If so, what product do people recommend for it?

You may as well. And it uses the same gearbox oil.
You need a thin hose, or straw, and syringe or similar to suck the old oil out.

Hang on, I just reread you originall post, you are asking 2 questions. The answer to the other question is; no - it is not necessary to change the oil when replacing the boots.
As for gearbox oil recommendation, IMHO any decent brand with at least 75w-80 or above is ok.
Lots of people have sung praises about Redline something-or-rather.
