I think with that offset it will be ok with guard rolling. 8in with +35 offset is about the same as 7in with +22 offset, which is doable, but only with guard rolling. But that's just the outside clearance. Not sure about whether there would be enough room on the inside, given that it's 8in wide. I think it would be ok though.
So I think the offset is probably ok, I'm just not sure about the rolling diameter...I think a 205/40-17 is probably quite a bit bigger in diameter than stock and that's probably the thing that will cause issues if anything.
What's the difference in outside diameter between a 205/40-17 and a 185/60-14?

185/60/14's are 22.7\"
205/40/17's are 23.5\"
205's are not wide enough to really take advantage of 8\" wheels. If you're going to go to all the trouble of fitting 17x8's on to a NA, I would strongly suggest you get some fender flares and wide tyres.
17x8 would be okay on a high-power race MX5 with big brakes. However, with stock power and brakes it would make your car slower and it would ride like crap.
What's you plan?
