I used to live in Wollongong and think it's got the best roads.

Personal favourite is going up Mt Keira, if only it were longer!

As a rough guide, start at Loftus, head thru the national park, pitstop at Bald Hill, coast road to Thirroul, up Bulli Pass, freeway to Wollongong, up Mt Keira, across Mt Kembla, freeway to Yallah, farm roads thru Dapto (care, water crossing!) up Macquarie Pass, thru to Kangaroo Valley Pub for lunch!

Then do Jamberoo Mt on the way back and any of the above depending on time.

I'm up for a run ... Bring a cb along to keep the pack together.

Macquarie Pass - up to Robinson Pie Shop, other roads out the back of Dapto (yes Dapto), Huntley Hill Climb, another road (can't remember name, goes to a lookout on the escarpment at the back of Dapto - very steep), Jamberoo Pass. Ask a motorcyclist or go to any of the bike shops, they will tell you of others.

Hunter area?
What about the Bulladehlah Hillclimb? Good enough for a CAMS event 8)
Road between Booral and Bulladehlah is good too  EVO TME is teh only thing to match the MX5 through there yet.

Come to think of it no he didn't :P
Just kept up with me when I was in a borrowed s14, had no chance when I got in the 5, his fancy Brembo's cooked
