16" is a bit of an oddball size for tyres.

Gear knob is the one place I would consider adding weight to the car.

Gearknobs are a preference thing, so just go for whatever one you think looks good.

As for the weight, again, it's preference.

Many prefer a heavier gearknob with the theory that it makes shifting easier (mass, momentum, etc)

I find one close to the factory weight to be a good compromise, I wouldn't use anything heavier.

I've used:

Factory - Good weight, badly shaped
Voodoo (old small version) - great shape, good weight (a little lighter than stock)
Golf ball - worked pretty well, certainly not the worst (really light)
Samurai sword handle - Really light effort to shift, it got in the way of the radio etc.

I suggest that you look at the range/price of track tyres available for 16" rims vs 15" rims.

You'll find a lot more options for 15" tyres and since these are consumables (ie. not a one-off thing), that's an important consideration.
