Just wondering how these are supposed to feel like; mine seems quite hard, with a harder bit in the middle? Could it be old and possibly leaking a bit.
I am searching for things that could be giving me a soft pedal feel.

Hi Mitch, that hard thing in the middle is a one-way valve (check valve). Whatever you do don't remove it or you will have virtually no brake booster assistance. With regards to the spongy pedal, did this just happen or over a period of time?
Cheers,
Danny

Well... you can, but don't put it back in the wrong-way-round
Short answer is 'yes' , the hose is very stiff in order to uphold the vacuum forces going through it.
Spongy pedal feel (under normal driving conditions) is symptomatic of old brake fluid, bubbles in the fluid, or failing brake lines.

thanks 1red5. Everything else about the brakes is new except the rear lines. So they might be next on the list
