I really don't have any problem with businesses refusing to fit things outside manufacturers specifications. Doing so leaves them wide open to disputes over warranty and, worst case, accident investigation. To me, and probably to the law, stretching tyres over wider rims is the same as a leccy beefing up circuit breakers to take higher current loads or a builder exceeding design loads on a slab.
You might be able to get them fitted by signing a waiver over future warranty claims but, like the leccy or the builder, the tyre fitter may still be open to comebacks on safety. I've got a good working relationship with my local tyre guy and I wouldn't want to expose him to any risk.
205/50 on 15x8 - Dealers refuse to fit this?
