New Exhaust time!

Alright so I've decided that it's time to replace the exhaust on my '98 NB8A.
I'm looking at 3 options- MX5 Factory in Ringwood, Town & Country Exhausts in Geelong, and waiting around until something cool pops up in the classifieds.
I've literally heard nothing but good things about T&C, but nothing about MX5 Factory. MX5 Factory also does an intake exhaust and ECU bundle, which I have requested a quote on but heard nothing about.
So, is it worth getting stainless? It looks nice, but aren't the tips always stainless anyways, from that point of view? Sure it lasts longer, but a mild steel or whatever else they use would still last longer than 6 years right? I've also heard that mild steel sounds warm and grizzly, whereas stainless can sound 'ringy' and tinny.
Also, I'm getting mixed messages about diameter. 2" is stock, I believe, and T&C use 2.25".
And lastly, how much of my exhaust is worth while replacing? Are the '98 stock headers any good, or should I get it all done while I'm there?
