car running too cold

well i had all sorts of dramas with overheating on the track when i fitted the turbo. i managed to solve this by fitting a cooling pro radiator, and a cowl cover and cooler thermostat from track dog racing.
so since i have removed the turbo, (and especially the intercooler which blocked a lot of airflow to the rad), the cooling system now seems to be working a little TOO well. it takes a lot longer to come up to temp (just shy of half way on the gauge). it maintains this temp in stop start traffic but as soon as i get a free run , doing anything more than 70kmh for a few minutes, the gauge drops down just below 1/4.
can i do any damage? should replace the thermostat with a standard item? or just leave it as is, seeing as i'm sure the extra cooling will still be of great assistance on the track. should i go back to a standard rad?? any thoughts and advice would be welcomed.
