So an oil catch can is connected in between the pcv valve and the intake to remove oil that is flowing through there and that would end up going through the combustion chambers?

yeh???

someone else told me that it stops leaks...... how so?

Yes, you've got it right, but it doesn't stop oil leaks. It can help if you have compression leaking past the rings as this would pressurize the sump and force oil out the breather at a reasonable rate - same thing if you have an internal blowup - the can should catch the pressurized oil. Won't help leaking seals or ventilated blocks etc. Important to be a reasonable size - if you need it to stop oil hitting the track its no good if it overlows - CAMS have requirements on size - 2 litre capacity for a 5 I think.
