You guys are referring to the 1st engine right? The open ports are to the oil cooler which are blocked of by the thermostat (will be in bipass mode since the oil is cold). The milky oil would have been in the filter and as pointed out has most likely been mixed whilst the car was running, not simply by water seeping in through an opening somewhere. Pour some water in some oil and watch what happens. It layers up with the oil forming a layer on the surface. It doesn't mix.

Btw... I'd crack that sump off the 1st engine and see if there are any good bits inside. It's had an oil cooler and the sump has been off. There is a small chance there are some nice rods and pistons in there.

Lets move on from discussing the 1st engine. The OP is now asking for opinions on the replacement which in my mind looks rough but is most likely internally fine. It's hard to pick up a clean second hand engine that hasn't been out in the weather.
