My timing has been like 12 teeth out once and while it spluttered and ran like sh*t temp was never affected. Even driving around unknowingly with a rotted crank for a week temp was still fine!

I am not sure if you fixed this yet, but I had a similar problem many years ago with a Pulsar SSS. You said you put a new fan in. The problem I had was that I had the polarity of the fan wires backwards, so the fan was spinning the wrong way. Meaning that when driving at speed the fan is trying to blow against the air coming in. That caused there to be zero air flow at high speed and the car got hot quick. My guess is you have the same problem.
