if your spark plugs are new you dont need to change them again. Just the $20 set of NKG's are great for mx5's, the deffs dont need $100 platinum iridium blah blah spark plugs. They come pre gapped, but maybe check that the gaps are all correct.
Check the colour/condition of them, here is a good pic for reference:

It could be fuel filter related, do you know when it was last changed?

if one of the injectors was damaged or blocked, it would be more if a constant mis-fire problem.

It could also be air system related, the AFM can effect how lean or rich it runs.
It doesnt sound like 02 sensor issues, but you never know.

If you're trying to diagnose yourself cheaply, it is easiest to get a friend with a working NA6, and swap their parts over one by one until you fix your problem. Then you know what part(s) to buy.

TBH - i dont think it has been changed since i got the car....

I checked that photo a while ago, its between normal and overheating, but more towards normal - I'll take a photo of it when i can - prob saturday

But yeah - its just temperamental!
