I've always wondered about these handbrake boots.. do you put it over the existing plastic "boot" cover? or remove the plastic?

Yes...me.
IMO, they're top notch quality. I've had them on both my Clubman and SP since 2009 and they still look as good as the day I fitted them.
Check my garage thread of me fitting them on my Clubman -

I removed the plastic cover and padded the inside of the boot with some thin sponge liner to give it some more body. Stretched over the plastic cover just looked wrong to me.

I've got the same ones as well, didn't think of the foam for the handbrake as I took off the plastic cover as well. Might give that a go actually.
The boot's are top quality, fit perfectly and just an overall good product.

Leather handbrake boot over the plastic cover as fitted to my NA. Doesn't look that wrong to me.

Purchased a set about 18months ago from the same seller.
Good and quick to deal with.
The boot and handbrake cover still look good.
Like Hammer, I slid the handbrake cover over the plastic cover, looks fine to me!

:]
Mine looked like it was bursting at the seams, leather should look soft and unstressed - to me at least, it is after all a personal taste thing.

Yep, I bought black with yellow stitching after my "prototype" Benny's Boots finally wore out.
The quality and service was brilliant.
I removed the handbrake cover for the handbrake boot, and sat the shifter boot over the OEM Mazda unit.
They look great.
