How to remove original steering wheel on late NA8 ??

Here's a pictorial step-by-step guide on how to remove the dashboard of an NA, taken from miata.net.

Check page 6 for the steering wheel removal? Although this shows the Nardi wheel (not the Momo).

Once you are at the point where you are undoing the centre nut on the wheel, please make sure that you leave this nut on for a couple of turns, otherwise, when you do finally get the wheel to budge, it may end up bashing you in the face and removing a couple of teeth!

It won't want to come off easily, and you will need some force to pull it off the hub.

Totally agree with leaving the nut on.

The wheel spline is generally on a taper. Once they move they come totally free similar to a ball joint.

When pulling on the wheel, I found applying extra force to one side then the other and rock/flex the wheel it should pop loose.

Alternative is to use a steering wheel puller.
