I can tell you that this doesn't cover track days - no matter if there are instructors or not. It seems more intended for the "how to brake in the wet" type basic safety courses (ie. nothing where you'd be likely to damage the car).

Thats rather untrue, I personally know of a claim payed out by Shannons on a car that went into the wallat Oran Park on a car club training day. Not saying they didn't complain about paying though.
But suggest you make your own enquiries.
