Dude, they're super common. High tensile is generally grade 8.8 if that helps. Any bolt place should be able to supply them.

Thanks for the suggestions Plohl. I'm also finding plenty of M8 x 1.00 (where 1.00 is the thread pitch in mm, not bolt length), but I'm struggling to find any M8 x 1.25 bolts, especially in my desired 25mm length. My mechanical knowledge is limited, but I'm of the understanding that 1.00 and 1.25 thread pitch bolts are unique. Or will both screw into the same threaded hole?

You don't want "bolts"
you want black capscrews (allan heads) 8mm x 1.25 x 30mm
These will be 12.5 so very bloody strong and what should be your only choice.

Thanks for all the help guys. I ended up finding my bolts at Repco. My local Repco is tiny and mostly stocks the basic everyman stuff (car wash, seat covers, etc). I dropped in to the much bigger Repco at Lidcombe and they got me sorted. Good service too.
Re using capscrews; I can't get access to tighten them when using my fixed PCI mount - I bolt the mount to the car first (to have access to the rear floor bolts) then bolt the Sparco to the mount inside the car. There is not enough room to turn an allen key between the side-mounted seat and the transmission tunnel, hence my need for bolts and a ratchet spanner...
